Serrano peppers are originally from the mountains of south-central Mexico. These plants can grow up to 60 inches tall and produce large amounts of pepper pods. Serranos are spicier than Jalapeños, with a heat rating ranging from 8,000 to 20,000 Scoville units. They are commonly used in uncooked dishes, such as pico de gallo, to add a crisp and unique flavor. The peppers are green when first harvested, which occurs about 2 ½ months after transplanting. When fully mature, they can be red, yellow, orange, or brown.
