Scorzonera, with its long, sleek, ebony roots, is renowned for its rich and delectable flavor. The roots release a milky white sap and should be thoroughly washed after harvesting. This biennial plant produces delightful yellow flowers during its second summer. In its early stages, the tender leaves can be added to salads, while the tops can be blanched, similar to Belgian endive. Scorzonera boasts exceptional storage capabilities and can be overwintered for a spring harvest, much like parsnips. It is an excellent choice for diversifying your selection of storage roots. On average, the roots measure 9-11 inches in length and 3/4 inch in thickness. Also referred to as black salsify, it is USDA Certified Organic.
