The pepper that holds the title of Mexico's favorite is a versatile one indeed! When allowed to ripen to its traditional red hue and subsequently dried, this pepper proudly takes on the name 'Ancho'. However, it also enjoys popularity in its green state as a 'Poblano', commonly chosen for the creation of chiles rellenos. This pepper, with thick walls and a mildly spicy kick, boasts a rich, mellow flavor. The moniker Poblano has its roots in Puebla valley, located south of Mexico City - this is where cultivation of these peppers first began. Continuously producing throughout summer in climates that enjoy warm days and cool nights is another noteworthy trait of this remarkable pepper.
