Originating from the Mediterranean region, fennel is presently grown across the globe. This fragrant perennial plant can reach a height of five feet and features dark green, delicate leaves, clusters of yellow flowers known as umbels, and small oval-shaped seeds with ridges. The seeds are typically harvested in autumn. Resembling celery in appearance, the tall stalk is commonly consumed as a vegetable, while the leaves and seeds serve as flavor enhancers for various dishes.

The Grosfruchtiger fennel, a nonbulbing type, stands out for its vigorous leaf production and delightful taste. In our trials, it proved to be the most flavorful variety. These leaves make an excellent addition to salads, coleslaw, and dressings.



As fennel plants mature, their flavor develops and becomes more pronounced. Very young plants at the baby-leaf stage offer a milder fennel taste. However, when they reach a height of 8-12 inches, their flavor becomes fuller and richer.



Aside from its culinary uses as an ingredient in various dishes like fish, potato, tomato or beef recipes where it pairs exceptionally well due to its sweet anise flavor; fennel also offers edible flowers known as florets that can be used as garnishes for savory dishes.
