The banana pepper is ideal for both pickling and consuming fresh. These large plants produce long, smooth fruits with thick walls. With an average length of 8-9 inches, these fruits have a mild taste when they turn yellow and become moderately sweet when they ripen to a red color. While they are most commonly used for pickling because of their mild flavor, they are also suitable for the fresh market. These bananas are widely adaptable to different growing conditions.
