The Anaheim chili, a type of green pepper with a slight hint of heat, matures to an attractive deep red hue. The thick-walled fruit has established itself as the quintessential pepper used in chiles rellenos, and a favorite addition to soups and stews, renowned for its rich, mellow flavor. These pepper plants are known for their disease resistance and bear fruit consistently through summer, as long as the nighttime temperatures don't exceed 90 degrees. Notably, this is the variety that is most widely cultivated and dried to create ristras - strands of dried Chile peppers that embody a New Mexican tradition. Originally conceived as a practical method for farmers to preserve peppers for extended periods, the Anaheim chili continues to be a staple in many kitchens.
